This is a casserole you'll keep coming back to, with a rich combination of flavours.

Ingredients
1 tbsp olive oil
1 cup onion, diced
1 cup red capsicum, diced
1 cup celery, chopped
3 garlic cloves
1 Ziggys Ukrainian Smoked Sausage, chopped into rounds and halved again
2 cups sauerkraut, drained
3/4 cup white wine
1 tsp thyme, dried
1/2 tsp ground black pepper
1 cup plain Greek yoghurt
6 cups mashed potato
2 cups grated cheddar cheese
Method
Heat oven to 200C.
Add the oil to a large pot and place on medium heat. Add onions and red capsicum and cook for about 5 minutes until translucent stir intermittently. Add garlic and cook for about 2 minutes until fragrant.
Add the sausage and cook for another 5 minutes until sausage starts to brown, stirring constantly to avoid burning. Add the sauerkraut, white wine, thyme and pepper and stir until combined. Cook for about 10-12 minutes, stirring occasionally until most of the liquid is evaporated.
Transfer the Ukrainian sausage mixture to a greased casserole dish. Spread the Greek yoghurt evenly over the top of the mixture, the spread the mashed potatoes over the top of the yoghurt. Evenly sprinkle the cheddar cheese on top.
Bake the casserole in the oven for about 25 minutes, until golden brown.
Remove and let cool for approximately 5 minutes before serving.
