Ingredients
25g unsalted butter
3 ripe Packham pears, cored, cut into thin wedges
1 tbsp caster sugar
50g dark chocolate, finely chopped
1 cup reduced-fat vanilla custard, to serve
Chocolate Crumble
¼ cup plain flour
1 tbsp self-raising flour
1 tbsp caster sugar
1 tbsp LSA mix
2 tbsp cocoa powder
30g unsalted butter, softened
Method
Preheat the oven to 180°C. Melt the butter in a medium non-stick frying pan over medium-high heat. Add the pears and sugar, toss to coat. Cook, stirring occasionally, for 5–7 minutes, or until the pears are tender and the juices start releasing from pears.
Transfer pears to six 250ml ramekins or a large baking dish. Scatter pears with dark chocolate.
Make the chocolate crumble: Combine flours, sugar, LSA and cocoa powder. Rub in the softened butter and 1 tablespoon of water until crumbs form. Scatter the crumbs over the pears and chocolate.
Bake the crumble for about 25–30 minutes, or until golden and warmed through. Serve drizzled with vanilla custard.
