Green Beans with Almonds & Lemon

Ingredients

  • 450g green beans, trimmed
  • 30g unsalted butter
  • ¼ cup sliced almonds
  • 2 medium shallots, finely diced
  • 2 garlic cloves, finely minced
  • zest of 1 small lemon
  • 2 teaspoons fresh lemon juice
  • salt, to taste
  • freshly ground black pepper, to taste

Method

  1. Bring a large pot of salted water to a boil. Blanch the beans for 4–5 minutes until just tender, then drain.
  2. In a large pan, melt butter over medium heat. Add almonds and cook for 2–3 minutes until golden. Stir in shallots and garlic, cooking for another 1–2 minutes until fragrant.
  3. Toss in the green beans, lemon zest, and juice. Season with salt and pepper, mix well, and serve warm. Enjoy!
