Makes 10 large pancakes
Ingredients
2 cups self raising flour
1 teaspoon baking soda (bi-carb)
2 cups buttermilk (or 2 cups milk, and the juice of a lemon)
1 egg
Topping suggestions:
Fresh berries, powdered sugar and maple syrup
Nutella
Butter
Bananas and caramel sauce
Method
If you don’t have buttermilk, in a bowl mix together the milk and the lemon juice, this will make the milk slightly curdle. Add the egg and whisk together.
In a separate bowl, whisk together the flour and Baking soda.
Mix the milk into the flour mix and whisk until it’s combined. Don’t worry if it’s not completely smooth.
Either use a mold, and spray with non-stick spray, or use a squeeze bottle to make heart shapes in a sprayed pan over a medium heat.
Cook until bubbles begin to form on top of the batter, about 2 minutes, then remove the molds and use a spatula to flip the pancakes to the other side. Cook for 2 more minutes until the pancakes are golden brown on the other side. Transfer the pancakes to a warm plate. And cover with a clean tea towel.
Serve warm with your favourite toppings.
